These were my favorites of all the wing glazes I made over the superbowl weekend. Sweet, moist and just down right amazing!
18 oz jar of orange marmalade
1/2 jalapeno slice with seeds
3 large cloves garlic mined
3 oz coconut (I found 6 oz packs of it with the frozen fruits at my grocery store)
juice from 20 oz can of pineapple chunks
1/8 teaspoon salt
1/2 teaspoon red pepper flakes
1/4 cup coconut rum
slurry of 1/3 cup water and 1 1/2 tablespoons cornstarch
Add all ingredients except rum and slurry in food processor. Pulse until well blended and garlic and jalapenos are finely chopped.
Put mixture in a medium saucepan. Add coconut rum and bring to soft boil. Let simmer for 4 to 5 minutes until slightly thickened. Add slurry and simmer stirring until thick.
