Meat and Potatoes….. oh yeah!!!

Meatloaf and Loaded Mashed Potatoes. It doesn’t get any better than this!

 

As I have mentioned I filled my freezer the other day with my butcher order. The awesome thing is they gave me an extra 10 pounds of ground beef. What do I do with so much unexpected ground beef? In my sons words. “Meatloaf mom. I looooove meatloaf” So, meatloaf it is.

So Matthew and I started our day with a quick breakfast and then he wanted me to watch Interstellar with him. I hadn’t seen it before. That was one long movie! Not bad though. Then he started asking when I was making dinner. He is ruled by his stomach.

Now keep in mind, meatloaf was the very first recipe I ever made. I have never had a written recipe for it. I was 6 when I made it. My mom just taught me to throw a bunch of stuff in and put a can of tomato soup on top, throw it in the over and wait. I have changed the process and ingredients over the years. This is not my moms meatloaf but here it is.

Not My Momma’s Meatloaf

3 pounds ground beef

1 diced onion sauteed in pan and cooled

3 eggs

2 tablespoons worcestershire

1/2 cup bread crumbs

2 tablespoons minced garlic

1/2 teaspoon pepper

1 teaspoon salt

1/2 teaspoon chipotle powder

1 teaspoon basil

1 teaspoon oregano

1/2 teaspoon ground mustard

 

Mix all ingredients together in a large mixing bowl. Place in baking dish and form into loaf. Place in oven preheated to 350 F for about 90 minutes.

Let stand about 10 minutes and move to a serving dish to get away from the grease. Enjoy!
