Loaded Mashed Potatoes
5 pounds potatoes peeled cut and boiled until tender
1/2 cup butter
1/2 cup sour cream
1 cup half and half (you can use milk if you prefer)
salt and pepper to taste
1 pound bacon cooked and cut into crumbles
4 thin cut green onions
1 1/2 cups shredded cheese (I used a mix of cheddar and monterey jack)
In large mixing bowl and with electric mixer mix together hot potatoes, butter, sour cream, half & half and salt & pepper until creamy.
With spoon mix in bacon and green onion reserving enough of each for garnish.
Fold in the cheese and enjoy!
