After getting all my meat into the freezer and spending the day with my boy dinner was just some simple pan seared pork chops. A little olive oil in the pan, salt & pepper and they were done.
Along with them I had some fresh green beans and baby potatoes so I just threw them into a pot together in salted water. Once they were done I drained them. Melted 1/2 stick of butter and sweat 4 large cloves of minced garlic. Then added the potatoes and beans back to warm them and added pepper.
The star of tonight’s dinner were the glazed carrots. A very simple recipe.
6 large carrots peeled and sliced. Boil in salted water until tender. Drain.
In the same pot you had the carrots in melt 1/2 stick of butter and 1/2 cup of brown sugar. Stir constantly.
You will find the mixture will start to get a little thick. Add the carrots back to the pot. Cook on low for 1 minute gently stirring so you don’t break the carrots.
Add a pinch of salt, a pinch or 2 of cayenne for flavor not heat and some parsley. Let it sit just a couple of minutes to let the liquid flow and you have the best glazed carrots!
