Today was the day to go pick up all the meat from the butcher so after Matthew got home from another job interview I took my favorite guy (and only son) out to lunch then picked up the meat. Now I have all the meat in the freezer and a few moments to breathe and relax. So I thought I would catch up on yesterdays meals. So here I am in the living room, cuddled under a blanket, I have the house smelling just yummy with my cranberry mandarin wax warming. I haven’t been able to find it for a while and have really missed it. Happy me!!!! And ready to share as promised, my first wing glaze. It was spectacular. I will call it simply Red Plum Garlic Glaze.
Other than Derick buying drumsticks instead of drumettes they were perfect. Hey, it worked and you can never have too much chicken so it was still a win to me!
I tried something I hadn’t before and threw the chicken in the deep fryer for about 10 minutes first to crisp up the skin. Another winner!!!!!
While the chicken was in the fryer I put the sauce together.
Red Plum Garlic Glaze
In the food processor combine:
3 gloves chopped garlic
1 green onion chopped
2 teaspoons chopped ginger
1 jalapeno chopped with seeds (don’t add the seeds if you don’t like the spice
9 oz red plum jelly
1/2 cup water
1 teaspoon vinegar
Process until all ingredients are finely chopped. Put mixture into medium sauce pan. To mixture add:
1/4 cup brown sugar
1/2 cup honey
1/4 teaspoon salt
Heat until dissolved then let simmer until reduced by half.
Place chicken in pan, cover with all of sauce and put in a 350* oven until heated through.
