Slow Cooker Pork Chops

My morning started out kind of rough. By the time I got everyone out of the house this morning I only had about an hour to get myself dressed for the day, dinner in the slow cooker and the kitchen and living room cleaned up before the contractor came to finish the back splash.
I started with pulling out my favorite slow cooker. I like it best because it’s oval and has the “keep warm” setting. I got everything prepared and in the slow cooker then went to get the lid. It wasn’t there!!! I just used it about a week ago and had it then. I have been making the kids all put dishes away for me and no one puts anything in the same place twice it seems. Since we moved about 7 months ago everyone keeps telling me that they don’t know where anything goes. So I am doing my best to “educate” them. It really shouldn’t be this hard.
So after looking for my lid for about 20 minutes I gave up. (I still haven’t found it) I pulled out my other slow cooker and transferred everything in. Now it was time to get everything else together before the contractor came.
Matthew bought a new truck recently that has been nothing but trouble. Today while he was taking Derick to work his brakes gave out! Can you believe that? So we were dealing with that today as well.
Faith had an early day. We finished her FAFSA application yesterday for her sophomore year so she was able to just take it easy. I think she is getting sick. Poor thing. She is my baby in every way. At 18 she will still climb up in my lap. So she has been wanting my attention.
Becca is looking for her own apartment. I’m a little concerned about that. She’s 21 and has already lived on her own but has come back home. Hopefully this will be a better experience for her. Good thing I had the slow cooker to fall back on today.
Finally Faith and I picked Derick up got Faith a sandwich for dinner. My little vegetarian will have nothing to do with pork chops. Got home and finished up the pork chops. I made jasmine rice and pan roasted some zucchini to round it out. It sounded really good to me. Don’t you think?
Now I am here and on to my pork chops!
Slow Cooker Pork Chops
 1 family pack pork chops
1 onion diced
1 48 ounce box chicken broth
4 or 5 cloves of garlic minced
2 teaspoons pepper
4 dashes of worcestershire sauce
1 teaspoon ground chipotle powder
Add all ingredients in slow cooker cook on low for 8 hours. Your meat will be falling off the bone. Remove all meat from cooker. Make sure to get all bone pieces out. With an immersion blender blend the liquid and bits of onion until smooth.If you don’t have one it’s ok. You an strain it if you want or leave it as is. I would leave it as is if I didn’t have one.
Make a slurry of 1/4 cup corn starch and a little water. (mix the corn starch and water together then add to liquid in cooker) stir until it begins to slightly thicken.
Leaving the meat as whole as you can add it back to the slow cooker.
At that time I made jasmine rice by following the directions on the package. Once was the rice is done add a small about of butter and the juice of 1 lime.
I had 5 small zucchini which I washed the cut into chunks by slicing on the diagonal, turning it a quarter turn and slicing. Threw them in a hot pan with a little olive oil. Salt and pepper to taste. Once they were nearly tender and browned I added 1 tablespoon each garlic powder and onion powder and the juice of 1 lime. Done!!! I am really happy with how it turned out.
Time to plate and eat!!!!!
